A ‘Time to visit the Supermarket’ Meal

We usually make one large trip each week to the supermarket. Before heading to the store, I plan meals for the week and make a very detailed grocery list. However, sometimes I find myself having to become very creative with some meals toward the end of the week (usually because the sweet Hubby raids the fridge & noshes on ingredients). Last Thursday was one of those days…Hubby ate everything I needed for the planned meal; requiring me to become creative.

This meal is the result of my creativity…

Lemon-Garlic Baked Chicken:

4 boneless, skinless chicken breasts
2 Tablespoons minced garlic
1 Tablespoon chopped flat leaf parsley
1 teaspoon sea salt
1/2 teaspoon black ground pepper
Juice of one lemon
2 Tablespoons olive oil
1/4 cup grated parmesan cheese
1/2 cup mozzarella cheese (optional)
1 stick butter

How To:

Preheat oven to 350 degree. Place butter in baking dish & allow butter to melt while oven preheats. Place oil, garlic, spices, parmesan cheese, & lemon juice in a bowl & whisk together. Once butter has melted, remove baking dish from the oven, place chick in the dish, and spoon the garlic mixture on top of the chicken. Bake for approximately 45 minutes-1 hour (or until internal temperature reaches 190 degrees). If desired, sprinkle mozzarella cheese over chicken & broil a few minutes until cheese is bubbly. DELISH!  🙂

Alfredo Spaghetti Squash

1 spaghetti squash
1 bottle of your favorite Alfredo sauce (check the carb count)
2 teaspoons minced garlic
1/2 cup grated parmesan cheese
salt & ground black pepper to taste

How To:

Slice the spaghetti squash in half & remove seeds. Place both halves on a baking sheet & bake for approximately an hour (this can be baked simultaneously with chicken). Remove squash from oven & with a fork, remove fleshy squash into a bowl (this will come out looking like spaghetti noodles–hence the name, spaghetti squash). Pour Alfredo sauce, garlic, parmesan cheese, salt, & pepper into the bowl & mix well. You may want to pop the squash into the microwave for a couple of minutes after adding the sauce to heat it back up. YUUUMMMYYY! 🙂
