Cooking for the Hubby

I love cooking for my Husband; I always have. The first meal I ever made for him was chicken and dumplings, mashed potatoes, green beans, yeast rolls, and apple pie–everything homemade & from scratch. Our first ten years together were filled with high carb and sugary foods. Now, however, those days are long gone & everything I make is very low carb. Low carb cooking was not as much of an adjustment for me as it was for him. I thoroughly enjoy recreating his favorite meals & discovering new favorites.

Tonight, I decided to make pork chops–one of his absolute favorites–plus two of his favorite sides. Recipes & picture below:

Parmesan crusted pork chops:
Ingredients:
2 thick sliced pork chops
1/2 cup Mayonnaise (make sure your mayo has no sugar–I prefer JFG Mayo)
1/3 cup grated parmesan cheese
1 1/4 teaspoon garlic powder
1/2 teaspoon sea salt
1/4 teaspoon ground back pepper
1/2 stick butter

How To:
Preheat oven to 375 degrees. Place butter in baking dish & allow to melt while the oven preheats. Combine mayo, parmesan cheese, & spices in a bowl. Coat pork chops well with parmesan mixture. Place pork chops in baking dish & bake for 45 minutes to an hour.

Mashed Cauliflower
Ingredients:

  • Head of cauliflower
  • 3 Tablespoons heavy cream
  • 2 Tablespoons butter
  • 1/2 cup sharp cheddar cheese
  • 2 Tablespoons sour cream
  • Salt & pepper to taste

How to:

  1. Cut cauliflower into chunks (medium sized is best) ā€” completely remove all the stem
  2. Place cauliflower chunks into a microwave safe bowl with the heavy cream & butter & cook 7 minutes (cover with paper towel)
  3. Stir cauliflower & cook another 7-8 minutes
  4. Place cauliflower & remaining ingredients in food processor ā€” process on HIGH until everything is incorporated well
  5. Spoon into a serving bowl & ENJOY!

Peas:
Bag of frozen peas
1/2 stick butter
salt & pepper to taste

How To:
Place peas in a small saucepan with 1/4 cup water and butter. Bring to a boil and immediately reduce heat to medium low. Add salt & pepper and cook for about 6 minutes.

The finished product:

Parmesan crusted pork chops, mashed cauliflower, and peas

(NOTE: peas are a starchy veggie, and contain a few more carbs that other veggies; therefore, eat in moderation.)
